Forgot why I revisited this thread today with Mat's poetic sirentrack sidetrack there. I wanted to tag this on: coincidentally twenty lines up on my wip.... 'She smiled, nodded and disguised her disinterest with the right inflections on the yesses and reallies...' Yes's and really's ? Hmmm.
Well you can spell them out like you did, or I have seen s's, or people put it in quotes like "s's." I think I usually go with the idea of the letter followed by the apostrophe and then an s. So 2 g's... would be how I would do it.
