    My mum used to make a variation of chocolate fudge shortcake, replacing fudge with condensed milk with a little vanilla essence for flavour and a homemade, crumbly shortcake base. It was amazing :D I'm trying to convince her to dig out the recipe.

    I'm sick and miserable, it's dark, wet and cold outside. There only one solution, or at least something you can pretend make it all better.

    I love chicken soup... and pumpkin soup, and mushroom soup, and asparagus soup and... well, lots of soups. I'm afraid I don't have a recipe for those, though. Mostly my mom makes soup and it's always recipe-less.

    I love Goulash Soup, served with fresh bread and aioli.

    Rich and tasty, spicy and warm.

    Anything that takes me back to the French or Italian Rivera. Easy to cheat, substitute, make simple as long as your base is made with fresh clams--leave them in (open shell). Crisp French or Italian bread a +++!.

    Brodetto: Fish Soup-(Italy)
    Bouillabaisse: French -similar- tho expensive use saffron.
    Zuppa di Pesce from Amalfi--Italy similar (tomato sauce).

    I like it best consumed on the floor, in front of a fireplace about three months from now. Take about 3 hours, accompany with nice low background music, and finish with a garnish of appropriate gender eating companion that makes the rest of the world move to another dimension.

    I love salmon. Buts is a sensitive ingredient, easily overcooked.

    With this recipes you get a light soup, and perfectly cooked salmon.

    4 portions

    1 small fennel,
    1/2 leeks, (100 g)
    1-2 carrots (100 g)
    1-2 potatoes, (125g)
    1 paprika (optional)
    0.5 tbsp olive oil
    1 x clove garlic, crushed
    0.5L water
    1 fish bouillon cube
    ½ lemon (can be skipped)
    1-2 tablespoon lemon juice
    0.5 tsp thyme
    1 pinch of white pepper, freshly ground
    A pinch of any salt
    200g salmon fillet

    Accessories
    4 slices whole wheat bread
    10 g low-fat

    1. Trim and split the fennel, and cut it into small pieces. Split, wash and slice the leek.*Peel the carrots and potatoes.*Slice the carrots and dice the potatoes.
    2. Heat the oil in a pot.*Fry the vegetables and garlic briefly.(You can skip this step if you in a rush)
    Add water, stock cube, lemon peel and juice, thyme and pepper.*Bring to a boil and let the soup simmer for 10-15 minutes under the lid.
    3. *Divide the salmon fillets in pieces.*Drop them in the soup, cover and set the soup aside about 5 minutes.
    4.*Season soup with more salt is needed and serve with bread.

    Super fast microwave soup in a mug.

    Get a mug.
    Take a fistful of frozen vergitables.
    Take a part of bouillon cube.
    Add some spices.
    Microwave it.

    If you got some protein source like ham, or tuna, quorn, or leftovers in the fridge you can add that too. You can also add some sort of sauce, anything from ketchup to teriaki sauce works. You can also switch part of the water for milk or beer.

    If you also have: An onion. lettuce, tomato. some decent cheese-(Gorgonzola preferred) and a decent roll or bread, have a burger with fries. If you have some sauce add a shrimp cocktail.

    If short--Go to McDonalds and get the same thing from the pros!.

    I just hade home made fried rice as a brunch. Easy and fun food.


    This is a basic recipe for fried rice that you can add to as desired. If adding other ingredients, increase the number of eggs to 3. You can add ectra things like like chicken, shrimps, mussels, vegetables, tofu, feta etc.

    Serves 4-6
    Ingredients:

    1 - 2 green onions, as desired
    2 large eggs
    1 teaspoon salt
    Pepper to taste
    4 tablespoons oil for stir-frying, or as needed
    4 cups cold cooked rice
    1 - 2 tablespoons light soy sauce or oyster sauce, as desired

    Preparation:

    Wash and finely chop the green onion. Lightly beat the eggs with the salt and pepper.

    Heat a wok or frying pan and add 2 tablespoons oil. When the oil is hot, add the eggs. Cook, stirring, until they are lightly scrambled but not too dry. Remove the eggs and clean out the pan.

    Add 2 tablespoons oil. Add the rice. Stir-fry for a few minutes, using chopsticks or a wooden spoon to break it apart. Stir in the soy sauce or oyster sauce as desired.

    When the rice is heated through, add the scrambled egg back into the pan. Mix thoroughly. Stir in the green onion. Serve hot.

    Fully agree, 2 weeks old fridge leftover, all dried out--De Rigueur with "Schezwan" -hot & spicy stir fry chicken or shrimp-also refrigerator refugees. Always remember to cook tooo much the first time!.

    Seen a few mentions of Microwave here. I use occasionally as a quick, easy warm up tool but never to seriously cook with. Just thought I'd pass along info below on them.
