I applaud you in picking an unconventional approach, and I could easily imagine really enjoying a story for that reason alone. As for how lack of sensation would affect her, one suggestion I have is to try to do stuff wearing gloves. It only muffles tactile feedback rather than eliminating it, but still, it could give you a pretty good idea of what challenges your character would face.
