    Apple cider isn't alcoholic.

Will be with the fam'. We actually have a second 'X-mas' in Puerto Rico. We celebrate Three Kings Day (also called Epiphany.)

Instead of a tree and Santa Clause, children decorate boxes and fill them with hay and grass and put them under the bed. When the Three Kings come (the ones who followed the Star of David to find the baby Jesus,) their camels eat the hay and the Kings leave you gifts in return.

Cider? Interesting. I have to make do with kool-aid that's been warmed in the microwave for about two minutes.

New Years is always fun down here. Mainly because our neighbors always get a little too happy with the fireworks and the police have mastered the dramatic entrance from the darkness ability.

Cider is fermented juice, although sometimes unfermented raw apple juice is refered to as cider (sweet cider). I prefer cider that is just beginning t ferment, so it has active effervescence. I make it by buying unpasteurised natural sweet apple cider, and I drop in several raisins. The raisins retain some of the "bloom" (natural yeast) from the skin of the grapes, so it starts the cider working. Leave the cap loose on the cider, and with enough air space between the surface and the mouth of the bottle, or you'll end up with a huge mess.

I will be partying at home on New Year's Eve - too many drunks on the road.
