Sorry for two posts in a row, Mods... I have Ina Garten's Indonesian Ginger Chicken in the oven, from her first Barefoot Contessa cookbook.
What is "triple orange vinaigrette"? Does that mean three oranges, three different kinds of oranges (mandarin, navel, and valencia, for example), or three things that are orange (Orange Crush, a carrot, and a crayon)?
I find her cooking show to be pretentious AF most of the time, but damn that lady has some amazing recipes! The roasted tomatoes I did last night were done to Ina's specifications and they came out perfect.
Barefoot with Contessa, I remember that show. A lady drinks high end liquor and cooks. More of a how to marinate your liver while doing kitchen things.
She knows what she's doing! I've never had one of her recipes fail. My favorite recipe of hers, ever, is her fresh corn salad from her first book. And, I love the episodes with her husband Jeffrey.
Same here! And honestly I've had a lot of luck with Ree Drummond's (The Pioneer Woman) recipe for the homier stuff. Her show isn't very substantial and she's kind of wooden on camera IMO, but everything I've tried from her has come out great.
Oh Ash... Well, that was me trying to be all creative with the name of a recipe I made up, a la "What would I call this on a menu if I wanted to entice someone to order it?" It was the juice of two kinds of oranges, plus a bit of zest of another, made into a vinaigrette with olive oil, salt, and pepper. It needed a tiny hit of acid (LOL) but I was out of vinegar. It was "clean out the fridge" day, and that was the hand o' cards I drew.
Good to know, because I can't stand the show but the recipes look tasty! Also, just to sit and watch for technique? Jacques Pepin. I could watch the man chop all day.
Dinner: Citrus Marinated Chicken Fajitas. Tonight the citrus in question is red grapefruit, which sounds weird but is fantastic.
I baked chicken legs and potatoes, on the chicken I put barbecue sauce, taco sauce and honey. It was damn Delicious, at least for me!
Okay, this isn't cooking per se, but when I was in Korea a couple of weeks ago, one of the restaurants I went to served water infused with bay leaf (laurel). Not tea, just a liter bottle of water with a bay leaf in it. After a couple experiments, I've found it works best if you put one or two bay leaves into a one liter (quart) nalgene or similar, then add about a cup of hot water. Let the leaf steep for a few minutes, then fill the bottle the rest of the way with cold water, adding a couple ice cubes if you really need it. It's not a tea, it's just a nice little extra note to filtered tapwater to make it slightly less boring. I think when classes start, I'll also put in a rubber cockroach, but only once the water is chilled, and only if the bottle is clear enough for it to be obvious
I lit up the BBQ and we had sausages. It was +3C here and I had to clear a path in the snow and it took a bit to cook them, but it was sooooo worth it. I love BBQ in the winter.
Baked peppers stuffed with stilton & rice...and a £3.99 piece of beef roasted for 4+ hours and sandwiched with tiger bread & some bag lettuce. It was okay, my son's back for Easter so hoping we don't...hoping I'm not annoying too much.
Tacos!! It's been my favorite food since I was a kid. My daughter often says, "Tacos again?!" She will be repeating those words once again tonight! Mwah hahahaha!
No cooking tonight, just assembly: Tuna salad sandwich on thin bread, rainbow baby carrots, pickled beets, a mug of green tea. (Trying to load in some antioxidants.)
Stay away from medical texts as well, my ex almost went vegan after learning the technical term for meat in that sense. If it helps any, God would not have given man the Earth and plants and animals if he did not intend him to eat them. I think he said something along the lines of: And mine children shall feast upon plant and beast, as I have made them tasty and abundant so that my children can be fruitful and multiply. (Also cannibalism was not in mine divine plan, and thee who shall consume thy neighbors shall become ill, fore I did not create my children to be tasty.)
You may be! B-12 deficiency can cause brain fog, memory loss, dementia, central nervous system issues, & sleep disorders (also incontinence, but I don't know that that makes a person weirder. ). I was just reading an article about B-12 deficiency mimicking the signs of aging, so they're wondering if elderly people who have those things would benefit from B-12 supplements. It's not accessible in the vegan diet, so unless you're supplementing, your only source of it would be the seafood. (The B-12 in tempeh isn't true B-12, according to what I've been reading, and isn't processed by the body in the same way.) (I've been reading up on B's because supplements are sometimes recommended for people with immune system issues.)
