    making soup dumplings.
    I overstuffed one of them and the dough split lol. its the 3rd time i've made soup dumplings and they come out different each time. i hope these come out good!

    Bacon wrapped madjool dates stuffed with goat cheese, drizzled with 18 year balsamic and meatballs in a spicy tomato sauce.

    I made it with plain chopped tomatoes though, because we don't have fire roasted ones over here. I wonder how big of a difference it'd make. Anyhow, it was magnifico! Not for those who can't stand spicy food, but I went a little crazy with the cayenne. Some notes I kept:

    At least 3 onions (one medium one is not enough. I went with two)
    At least 1 or 2 cloves of fresh garlic in addition (the dried one was not noticeable at all, but then again I kinda fucked it up, because I went heavy with the cayenne)
    A tad more cream cheese
    I preferred it with some grinded cheese at the top
    You absolutely have to add some green onion at the top. It really made a difference.
    More salt

    Overall, yummy, fast and easy.

    So, this time I made Pastalaya from this recipe, which I didn't follow exactly:

    turned out a little spicier than intended again, but still very enjoyable. I added a different mix of vegetables, twice as many, 4 cloves of garlic, a tad more spices, more salt (it was needed), 250 gr less pasta and more cream and voila:

    Roasted brussell sprouts. They're like potatoes, in that if the outside is crispy and burnt, the inside is perfect.

    I just made my first burrito pie casserole. Mashed potatoes on the side with garlic, sour cream and a little shredded cheese inside. So damn good!!

    Homemade Italian sausage, stuffed into natural pork casings. Got a meat grinder/sausage stuffer a few years ago that doesn't get nearly enough use. It's a lot easier to do with Mrs. A helping (swing away with the triple entendres, I'm tired.)

    Got a call from HR yesterday - the company I'm working for as a contractor has offered me a permanent position! Decided to celebrate with steak diane, truffle mashed potatoes, roasted green beans and champagne.

    It's taco night. I use ground turkey insyead because it's hella cheap. Some corn on the side. I'm mosy excited to try my new "Desert Heat Chipotle" hot sauce though.

    Simple dinners are nice sometimes.

    I got some Tabasco Scorpion Pepper sauce recently and I really like it. It's 50,000 SHU, but the cool thing is even if you don't use a lot of it and make your dish super hot, the heat that's in there has a real heat to it, if that makes sense. My tongue isn't burning if I use just a little, but there's a snap to the heat that's there.
