I was wondering if anyone here knows of any novels that deal with the subjects of international terrorism and preferably I would like that book to also be science fiction or fantasy. Also any fantasy books that are particularly about hunting down a single man would be good as well. All help will be appreciated.

With regard to your second point, I would recommend Stephen King's "The Running Man", which was written under his pseudonym Richard Bachman, and is set in the near future and tells the story of a desperate man who volunteers to take part in a dangerous game show where he is pursued by hunters in return for a potentially large cash prize. A very fine story. You may even have seen the movie version, starring Arnold Schwarzenegger.
