Anyway, I found an article on it that's actually pretty insightful and that actually uses published books as examples to analyse (giving both a generalised chapter length optimum and those books that broke the "rules" and won prizes). The summary of the article is basically: adjust your chapter length according to the pacing of your story and vary it according to your purpose.
