    use of oral speech and regional dialects

    In novels what do you think of the use of words that belong to the "oral speech" or some "regional dialect" ? For example in the sookie stakhouse series, Charlaine Harris sets her story in northern louisiana and sometimes uses in dialogues words such as "Liked'em " "You sure ?" or even when it's the MC narrating something, some things are not " standard English" such as "real good" instead of "really good". I like it because it sounds more "real" but at the same time I feel like it can be offensive . And also when the story is set in a non English speaking country, would it feel fake to use "oral speech" style of writing for the dialogues ? (my current project is set in France, but I write in English)
