    ...the 2nd Annual Pyrotechnics Extravaganza at the Contoises'...

    Surname is Contois.

    Would an apostrophe be used after Contoises because house/home/residence is implied but not stated?

    Thus, ... at the Contoises'... is correct?

    Yes, I think it's correct, but it's not super-graceful. I'd be tempted to go with "Contois residence" - kind of like a title, almost, so the possessive isn't needed? But I think if you leave the "residence" out, you'd need the possessive. (This is more based on conventions rather than a logical rule, as far as I can see...)
