Made my first ever cassoulet at the weekend and living off leftovers. very easy, very tasty, great winter filler!
Cassoulet is nice. Did you have swanky sausages? I feel a little bit guilty buying pork loin mid-week - but they were the orders. (stuffed). Plus a bramley, buttered parsnips, greens & umm overkill of roasted Charlotte potatoes & old-type Bisto. Pig.
Yum! Green goddess salad dressing is one of my favorite vintage recipes. As to what I'm cooking...probably a burrito with the last of the leftover filling. I'll also throw some chicken in Champagne salad dressing to marinate in the fridge for tomorrow.
No swanky sausages - pork belly (i cut the rinds off and keep them on a skewer so they can flavour the stew but be chucked away) and good ordinary chipolatas - chopped a few into the body of the stew and placed a few on top for the last half hour so they browned nicely - looked the biz. Apart from that diced onion, diced carrot, balsamic vinegar, rehydrated butter beans (SO much better than the tinned ones, although they will do), and thickened with a little cornflour rather than tomato puree. Not quite as rich as the full monty with Toulouse sossies and tomato, but rich and comforting. Pork loin with buttered 'snips, roast spuds, and apple sounds like a hell of a mid-weeker! Love it. I had a tin of ravioli and a marmite sandwich (I was decorating and needed quick calories)

And I need a few more menu ideas for my half ton bag of dried peas from the Asian shop. ... One of the most beautiful meals I've ever eaten was a single stuffed chicken leg. Probably a roadside caff in France - to English eyes the highest of heights. I'd like to try the recipe at home, very delicate.
well maybe I just made bean stew and gave it a fancy name... I think it can be pork or duck. You can buy it tinned in France, made with ham and mixed beans! still good I reckon you could make a very nice daal with dried peas? Or - yeah - do what I did with the white beans but use peas. Soak 'em and boil 'em. You just need some rich meat - the slow cooked pork belly was ****ing excellent with the onion, garlic, and carrots.
