Don't know any fish recipes (I can't eat seafood), but there's a bunch of quick and easy pasta dishes. Carbonara is a good one. Or if you have any leftover bolognaise sauce, it can easily be used for a lasagne or canneloni... One of the absolute simplest pasta dishes ever is to lightly fry a little bacon and onion and toss it through your favourite pasta with a nice helping of pesto.

Chicken, bacon, chopped onion, fried up in peanut oil for five minutes, then add chopped broccoli, chopped asparagus and sliced mushrooms, half a cup of cream, a tablespoon of butter and maybe some frozen peas or sweet corn. Mix in your precooked pasta after 10 minutes, and serve. Takes 15 minutes, and you can omit the chicken and bacon if you're a vegetarian and it's still great. I make it all the time.

    Salmon burgers?

Chop the salmon into chunks, put it in a blender with some grated ginger, soy sauce, corriander, and curry paste, whizz it up a bit, then shape it into burgers. Then just fry and serve. I'll try and find you the full recipe, if you're interested.

Sole fillets sauteed with butter and lemon. Lightly dredge them first in flour, season with salt, pepper, and a pinch of cayenne, then sauté them in butter, turning them once. transfer the filets to the platter, add some fresh lemon juice to the pan, stir and drizzle it over the fish. Garnish with minced fresh chives. Serve along with buttered rice and a green salad.

Pasta primavera: linguine (or other long noodle), alfredo sauce, peas, diced tomatoes, chopped broccoli, chopped white and green onions, garlic, basil, pinch of pepper and kosher salt. Boil noodles, cook veggies. Mix, add alfredo sauce and spices over heat. Let stand for 2-3 minutes to thicken. Serve with baguettes or Italian loaf, and sodas or water.
