I like both, with all their variations. A tart tomatilla-based salsa verde with Anaheim and habaƱero, or an earthy salsa colorado with ancho and quajillo chilies, sometimes with smoky cascabels or chipoles. And sometimes with a dark brown mole poblano sause hith chocolate and a rich blend of chilies. Love them all!
