I don't get it? I offered you a specific dictionary definition that states it's used as a term for stripping blubber from anything, not specifically whales.
At a guess since the definition specifies blubber in both parts of the definition the word probably has it's origins from people who did whaling and seal hunting. It may have morphed over time to include the skin of any animal it but seems like that wasn't the word's initial purpose.
Well of course. It seems it started from Dutch word that specifically meant stripping blubber (from whales, seals, walrus, anything with blubber, etc), but by contemporary means it implies you're cutting the fat/skin from anything; hence 'Flensing Knife', a knife specifically shaped and balanced in order to slice off the skin and fat from muscle.
