I still remember my parents' copy of Manwatching by Desmond Morris. It had an illustration showing that a white-faced man is more dangerous than a red-faced one. Someone whose face has gone pale has lots of blood going to their brain to help them decide how to handle the situation, while the red face is a threat display that shows they've decided to bellow their way out of it. Don't know how well that science stands up, but anecdotally it seems pretty sound.
