    Corn flakes and plum wine. An odd combination, but it tastes good.

    Or the wine could be making a fool of me...

    Either way, I have to go shopping tomorrow.

    When are they going to open the stupid border? My sister and her nieces are in Montreal, and while it isn't the hugest deal if I don't get to see them for several months, it's absolutely killing my parents. Not that they can come see me 30 miles up the road or anything, but I have no grandkids for them!

    (and thank fucking god for that... my wife and I would have pulled a murder-suicide if we had kids to take care of during this)

    Creole chicken. So good!

    From a recipe for creole shrimp, just subbed chicken for it. Then one day I realized the recipe for pork chops and Spanish rice is identical, just different meat. I also sometimes sub out various pastas for rice and vice verse. Mix and match cooking.

    My patented beer burgers. Don't make them often because I cant have a grill, so I'll have to sear them and then bake them off. Not perfect, but whatever.

    My dinner is a very taxing endeavour of cooking shop bought pizza. I chose this because I needed space in my freezer box for the loaf of bread.

    Monday it was tonic water and depression for dinner then reheated spaghetti at one am...don't ask. Tuesday was...oh god what was Tuesday....it`s only Wednesday...

    Oh yeah Cinco De Mayo used some leftover refried beans, canned chicken with more taco seasoning, and some cheese on a tortilla tossed into the sandwich maker. My patented Not A Taco. I mean....i`m basically describing a burrito without all the wrapping but...I don`t even know anymore man. There was something else we ate that night....I don`t remember what it was,,,

    Tonight was mac and cheese with mushrooms and onions on the side.

    Trying to keep to one good meal a day.

    I really pushed the boat out today, and cooked multiple foods. :p

    Crispy chicken, rice with Bolognese sauce, and green beans. It was very good. Nicest food I've eaten in a long time. Although last night's pizza was pretty good too.

    Varza gatita - no photo because it is impossible to make stewed cabbage look like anything but stewed cabbage; sounds horrible but is the comfort food of the gods. I make mine in a very Romanian way with salt, peppercorns, some fatty pork, bay leaves, and tomato puree. Oh, and and cabbage. A lot of cabbage.

    Can't comment having never had your chorizo stew, but it sounds good :cool: I do a "chick 'n chori" stew - chicken thighs, chorizo, spuds, and huge chunks of carrot which is another good comfort food - bit more wintry though, quite rich for this heady summer that we seem to be enjoying...

    You can add shrimp to that, too. And then riff off it with a tomato broth, or a clear broth, or some cajun over rice to simulate jambalaya. It can ever veer Mexican if you switch the spices.

    I tend to make it fairly plain as the chorizo has such a strong flavour, but I was thinking of making a jamabalaya or a gumbo - that sounds good. Should have all the ingredients in my lockdown freezer (well enough of 'em)

    Maybe less veg and more beans and use boneless chicken - I tend to use thighs on the bone - the skin makes a nice crispy topping and they run a rich fatty stock into the stew which the veggies braise in.

    Poverty version is onion, garlic, sliced chorizo, potatoes, chicken stock to the top, on the hob, then oven hour +, coriander [meh] + bread + butter, cheddar [pig].

    Yeah, definitely want to go with bones if you're building stocks or braising. Chix thighs are cheap and utilitarian. I have an uncle who makes his marinara sauce with chix thighs.
