Enjoyed some crisp fall air while grilling out tonight, some salmon, burgers, chicken, and brats... essentially clearing out the freezer and using up the last of the propane before packing things away for winter. It's not Thanksgiving yet, but sure feels like it! Now if only I had some cheese curds...
I made some decent beer-base beef stew yesterday, waiting for lunch to find out how it really turned out.
Among other things, chiefly scalloped potatoes, I decided it was time for a nice bone-in rib steak today. Was pretty happy with it. Simmered butter with some herbs until it browned, then used that partially as the pan oil. Roasted the steak after applying a thick layer of a special dry rub I use and basted it with the additional browned butter. Came out beautiful and soft at medium rare. Spoiler: Steak
Well I did make two of those big guys because I have a pack of four from CostCo so... Find yourself just outside San Diego, sure, come on in!
Actually you do not neeed to cook the noodles at all. Just soak them in water five minutes max (I just run them under the faucet a few seconds). The waters in your tomato sauce will 'boil' the noodles to a perfect al dente. Cooking them beforehand makes them mushy. You can use the same flat noodles to make cannelloni as well. Soak them until they are soft enough to roll (10 minutes-ish) cut them in half widthwise and fill them. No need to buy cannelloni shells. I have made lasagna about 1000 times, both veggie and meat.
I've been making a lot of Hungry Man Frozen dinners lately! Yum! At first I did not care for them, but while I can cook a 5 course meal, with just me here, that is silly. So in 5 minutes I can take a $2.50 meal from frozen to cooked.
Arancini (breaded risotto balls) with marinara sauce, grated parmesan cheese and an Italian herb vinaigrette.
I am not a huge fan of risotto, but will make it for the leftovers and those golden arancini with melted mozzarella in the middle and a picante tomato sauce. Yum.
I thought about cooking up a little Lox this morning... For those that do not know, it is smoked salmon with cream cheese, capers, and a little dill on a bagel, open-faced!
If When I go to Hell, the dinner menu will feature liver, sweet potatoes (with marshmallows), brussel sprouts, and tapioca pudding, every day for eternity.
Holy smokes, I must be going to heaven because some of them are my favorite foods. I have all of them in the pantry or freezer!!
Even though I've got a tall stack of cookbooks, I can never find the right one at the time. I have a cut of halibut on the stove, next to some brown rice. Lemon pepper and thyme for the halibut. I've never liked rice before, but I've been bouncing on-and-off the Mediterranean Diet.
