Dear England - I hate you! Was going to make enchiladas tonight. Thought the taco-isle was weirdly small - but I found a pack of small tortillas, so I was happy... until I got them up today. One of the extremely few sort of tortillas they had was coconut flavoured. I didn't even think I needed to keep my eye out for that crap! Should've known when there was only ONE salsa to choose from. So I'll have to head out and get some eatable ones... Might as well get some feta cheese for my sallad, but I'm still mad! ETA: apparently unflavoured tortillas live in the bread isle... I am... slightly ok now.
Something with chicken, that's all I know right now. Could be pasta, could be fajitas, I'll see how the bf feels.
Coconut tortillas? I thought I had it bad, we can only get tortillas that are a little too small for a burrito, but a little too large for a convenient soft taco. At some import food shops we can get multiple kinds of salsa, as long as they're from the "Ass-Kicking" series

Haven't made tortillas myself. I will have to try it out at some point! Coconut is my kryptonite. It's one of the few flavours (and smells) I really can't stand. We're having a great time, thank you If they had a large selection coconut might have made sense, but they didn't. Or it turned out they had more, but that was over by the bread. Why have a shelf for taco-related things if you're not going to keep your entire selection there? Salsa was over by the chips/crisps for dipping. If they wanted to sell their products... maybe keep them in both places?

Despite everything hurting from the mud run yesterday, Mr. Kelly and I are heading to a local festival celebrating all things French. We had quite a workout so I am planning on eating and drinking ALL THE THINGS without a shred of guilt.
My birthday is Tuesday, so I've taken a stab at making a wholewheat spelt chocolate cake to take to work. It needed more time than the original recipe called for, but it seems to have come out okay
Caribbean Rice. Besides spices, its got red kidney beans, chopped up onion/peppers, a mixture of white and wild rice and some corn for added flavor. Gonna make a big enough pot to hold me over until flight day, Wed.
I have a shitload of dill in my herb garden, I'm going to make a cheesy dill beer bread with some charred jalapenos in the mix. And if I'm going to make bread I gotta have some soup, right? So I'm making homemade clam chowder to go with.

Smoked and slow cookered pork chili. Pork loins an hour in the smoker at 225, sliced one shredded the other in the food processor and into the crockpot with the usual suspects of other ingredients. We'll see.
I'm not quite as enterprising as @Iain Aschendale. I think it will be home made pizza with 4 cheeses, garlic, feta, baby spinach, olives, roasted artichoke hearts and bacon.
I’m doing a sloppy joe type thing with beef, lamb and bison and the sauce I’m making from a recipe in ‘Eat This Not That’. I’ve made it before and the sauce is pretty good, but I’ve only made it with ground turkey or chicken or plain beef. We’ll see how this works with the mixed meats.
There's something about the weather this year that has my herb garden doing amazing! In an attempt to use some of its bounty up, I'm making a basil-lemongrass chicken stir fry with coconut rice.
Making some teriyaki chicken, white rice, and a vegetable medley tonight. Nothing fancy, but it gets the job done.
